When we made this wine we were initially underwhelmed with the result so we took most of it and added a bunch of hops. 

However, one barrel shined brighter the rest so we sent it on a journey to find itself. 

Over a year later it blossomed into a beautiful almost mythical creature. It is certainly not our normal style but damn if it isn’t spectacular in its own right. Is this a larger metaphor for personal development? We don’t know. You tell us.  

Four day cold maceration on each prior to co-ferment. Aged 16 months sur lie. 

Total nut bomb with a marzipan finish.

Like all our other wines, it was wild yeast fermented in neutral oak. Other than a very small amount of sulfite, absolutely nothing was added to this wine. Unfiltered and unfined.
